We love zucchini in almost any form, unless we don’t eat them raw. This is a great food that is very easy to prepare and easy to digest, which is also very easy and simple to cook in any conditions, even in the field. Today I offer to your attention just such a recipe for cooking zucchini, simple and useful.

The above amount of products is enough to prepare four large portions of stewed zucchini.

zucchini – 4 pcs.;
pepper – 4 pcs.;
carrot – 1 pc.;
tomatoes – 1-2 pcs.;
any greens – 50 g;
vegetable oil – 50 ml;
Sil – 1 tsp

The method of cooking stewed zucchini.

Before starting cooking, pour vegetable sunflower/olive oil on the bottom and put the dishes to warm up on a slow fire. We wash the zucchini well, young ones have a soft skin, so you can not remove it, I usually peel it only in those places where it has some damage (scratches, dents, etc.). Do not cut the zucchini finely, during the cooking process they should not turn into a shapeless mass.

We put them in a cauldron, cover with a lid.

Now we cut the carrots, I have a large one, so I cut them into quarter circles.

Add it to zucchini. At this stage of cooking, the vegetables have not yet had time to give juice, and so that they do not fry to the bottom of the cauldron and do not fry at all, we add a little water, enough to cover the bottom.

We also do not cut the green pepper very finely (it is also called dolma pepper).

Add it to the rest of the vegetables. When adding each new ingredient, mix everything well.

Lastly, cut the tomato into cubes.

Transfer it to a cauldron, mix and cover with a lid. Simmer on low heat for 10 minutes without opening. Then, if there are dried herbs, add them.

And so is salt. I use a large seaweed, but it will completely dissolve during cooking.

Cover with a lid again and leave the dish to cook on its own for another 10 minutes. During this time, we wash and cut fresh greens.

And about 5 minutes before it is ready, add it to the dish.

Ready stewed zucchini is served to the table, seasoned with sour cream or mayonnaise and decorated with fresh herbs.
