Stewed zucchini with pasta. Recipe with photo / Second dishes / Delicious

Cooking stewed zucchini with pasta. Stewed zucchini can be served not only with pasta, but also as a side dish to meat or fish dishes, or as a main dish to boiled porridge, potatoes. The indicated amount of ingredients makes approximately 6 servings.

Peel the onion and carrot. Cut the onion into cubes, carrots into circles.

Lightly fry the chopped vegetables in vegetable oil until the onions are transparent.

Meanwhile, wash the zucchini well and cut into small pieces (as in the photo).

Add the zucchini to the onion and carrot, stir and simmer for about 15 minutes over medium heat, stirring occasionally.

Put the tomatoes in boiling water for 20 seconds, remove the skin and cut into cubes.

Then add the tomatoes to the zucchini, salt well, mix and, stirring from time to time, simmer for about another 15 minutes.

Wash and finely chop the dill greens.

At the end of cooking, add dill greens, garlic squeezed through a garlic press and ground black pepper to the dish.

Mix everything thoroughly and remove from heat.

Then add hot pasta just cooked in salted water to the vegetables, mix everything again.

Place the dish in serving plates and generously sprinkle with grated parmesan. Stew zucchini with pasta is ready.
