Stuffed zucchini with minced meat in the oven. A great dish for dinner

young large zucchini-zucchini – 3 pcs.;
minced pork – 500 g;
tomato – 1 pc.;
green onions – a handful;
large onion – 1 pc.;
tomato paste – 2 tbsp. L.;
garlic – 3 cloves;
Parmesan cheese – 20 g;
oil for frying – 5 tbsp. L.;
mozzarella cheese – 200 g;
spices: salt, pepper and Provencal herbs.

Zucchini stuffed with minced meat and vegetables, melted cheese and perfectly selected spices! This is the kind of dish I recommend preparing for dinner for the whole family today.

The process of cooking stuffed zucchini.

  1. Prepare 3 young but large zucchini. Mine weighed about 400 g each. Wash thoroughly with cold running water and dry with a paper towel.

Advice: to reduce the amount of meat when preparing the filling, I recommend adding boiled rice. From 50 g of rice (weight before cooking), you will get about 140 g of rice after cooking. Thus, you can use 350 g of minced meat plus 140 g of cooked rice. Add the cooked rice to the filling at the very end, before stuffing the zucchini. If the rice is fluffy, you can also add 1 small egg to the filling.

After baking, decorate each stuffed zucchini with chopped tomatoes and sprinkle with chopped green onions. Serve immediately or even after cooling.
