Tiramisu is a delicate Italian dessert prepared on the basis of creamy mascarpone cheese and Savoyardi biscuit sticks soaked in coffee with alcohol. It can be prepared in one large form or in small portioned cream cakes. It is easier to prepare such a dessert in a large form, but it is easier to serve it in cream cakes, since tiramisu, due to its delicate structure, is difficult to carefully cut into portioned pieces.
This amount of ingredients is calculated for a 17×30 cm form or for 7-9 cream cakes.

Prepare the cream. Since raw eggs are part of the cream, they should be thoroughly washed with soda and poured with boiling water. Separate the yolks from the whites. For now, put the whites in the refrigerator, and beat the yolks with sugar into a light fluffy mass.

Add mascarpone at room temperature to the beaten yolks in parts and carefully mix it with the yolks with a wooden spoon or spatula each time, rubbing the cheese against the walls of the bowl, until a homogeneous mass without lumps is formed.

Beat cold egg whites with a pinch of salt until stiff peaks form.

Mix the beaten proteins into the cheese mixture in three batches.

Add alcohol to pre-brewed and cooled coffee. I added rum. Immerse the sponge cake in the coffee for a short time, literally for a second, so that it absorbs a little liquid, but does not soften completely.

. and immediately put on the bottom of the form where we will make tiramisu.

Spread half of the prepared cream on top of the cookies.

Place the coffee-soaked sponge cake on top of the cream again.

For the cookies – the remaining cream. Put the dessert in the refrigerator for at least 4 hours.

Also, such a dessert, as mentioned above, can be prepared in portioned cream cakes. In this case, I lay out the cream and biscuit cookies in the following order: cream – cookies – cream – cookies – cream.

Before serving, remove the dessert from the refrigerator, generously sprinkle with cocoa powder or grated dark chocolate and serve. The delicate Italian Tiramisu dessert is ready.
