Vegetable stew. Recipe with photo / Second dishes / Delicious

Heat the olive oil in a large pan or saucepan and fry the onion until transparent.

Then add sweet pepper, zucchini and eggplant, mix. Simmer uncovered for 15 minutes, stirring occasionally.

Then add chopped tomatoes.

Salt and pepper, mix. Simmer for another 10 minutes.

After that, add finely chopped garlic, mix and stew for another 5 minutes.

When serving the stew, sprinkle with chopped parsley and put slices of parmesan on top. Tasty, light and useful vegetable stew ready
