Vegetable stew with mushrooms in 20 minutes – a recipe with a photo

Today we are preparing a very tasty and hearty vegetable stew with mushrooms. It is prepared in a short time and simply. If the mushrooms and vegetables are cut in advance, then the whole process will take 20-30 minutes depending on the time of readiness of the potatoes.

potatoes – 1 kg;
mushrooms – 400-500 g;
onion – 1 pc.;
carrots – 1-2 pcs.;
sweet multi-colored pepper – 2-3 pcs.;
tomatoes – 3-4 pcs.;
salt pepper;
greens – as desired.

Cut the mushrooms into medium pieces.

We also cut the potatoes in the middle according to the shape you like. We stew it under the lid in a small amount of salted water. Cook until done.

Next, we need preferably two pans or one large one. Fry the onion until transparent. Then we add carrots, and after 5 minutes – chopped pepper.

After 3-4 minutes, add diced tomatoes. It only takes 15 minutes to fry vegetables.

At the same time, in another pan or in the same pan, fry the mushrooms until ready. Usually it is 5-15 minutes depending on the cut of the mushrooms.

At the end of frying, mushrooms and vegetables should be salted and peppered, or any other spices you like.

It remains to mix potatoes, mushrooms and other vegetables. Hearty and tasty stew is ready.
