Vegetable stew with rabbit – a recipe for cooking the dish.

You can make dietary vegetable stew with rabbit from fresh autumn vegetables.

Ingredients:
1 rabbit (about 1.2 kg);
2 bulbs;
3 carrots;
Eggplant 3;
3 tomatoes;
4 bell peppers;
a few cloves of garlic;
2 Zucchini;
vegetable oil for frying vegetables.
salt, pepper to taste;

Eggplants, carrots and zucchini should first be peeled, then cut into thin slices and fried in a small amount of oil.

Eggplants must be salted a little before frying, let stand for ten minutes and then rinse well with water, these manipulations are necessary in order for corn and bitterness to come out. Tomatoes, onions and peppers are also cut into pieces. But these vegetables do not need to be fried.

Mix all vegetables, fried and raw. Then salt and pepper.

Cut the rabbit into small pieces, marinate with spices and fry until almost done.

First put the vegetable mass in the baking dish. Spread pieces of rabbit and cloves of garlic evenly on top. Cover with foil. Bake until the dish is fully cooked in the oven at 180 degrees. It will take about forty minutes.
