Cooking vegetarian pizza with grilled eggplant and capers.

Another great pizza recipe from my favorite Italian book, Grande libro della Pizza. This time it’s a vegetarian pizza with grilled eggplant, capers, tomatoes, fresh basil leaves and tender mozzarella. In the absence of a grill pan, eggplants can be browned in a regular pan. Maybe the pizza will not look so impressive, but it will not affect the taste at all
From this amount of ingredients, we will get two large pizzas with a diameter of 30-33 cm.

First, you should prepare the classic tomato sauce for pizza.

Knead pizza dough from the indicated ingredients.

While the dough is rising, prepare the vegetables for the filling. If desired, peel the tomatoes and cut them into slices 3-5 mm thick.

Cut the onion into half rings, salt well, mix.

Cut the eggplants into circles 3-5 mm thick, put them on a heated dry grill pan and fry them on high heat for 2-3 minutes. on each side, until dark stripes appear on the eggplants (as in the photo).

Divide the dough, tomato sauce and products prepared for the filling into two parts. On a floured counter, thinly roll out one part of the dough into a circle with a diameter of 30-33 cm. Transfer the rolled out dough to a floured baking sheet.

Spread the dough with sauce, leaving the edges free.

Spread onions, tomatoes and eggplant evenly on the sauce.

Then put capers and pieces of cheese. Pepper the pizza a little and place it in an oven heated to 220 °C for 10-15 minutes. So that the eggplants do not burn, it is better to bake the pizza on the lower or middle tier of the oven.

Sprinkle the baked pizza with olive oil. Lay out basil leaves and taste Bake another pizza in the same way.
