Young fried potatoes in a pan. Recipe with photo

small new potatoes – 1 kg;
butter – 50 g;
fresh dill – a good handful;
fresh onions – a good handful;
spices: 1 tsp. salt, sweet pepper, marjoram and dried garlic; 0,5 teaspoon each black pepper and coriander seeds; 1/3 tsp. chili, a pinch of thyme and cumin.

  1. Choose small new potatoes with a total weight of one 1 kg. Put the potatoes in water and clean them from the ground and cut off the inedible parts. There is no need to peel the thin potato skin. I do it superficially and only in those places where the skin comes off easily with a sharp knife.

Bring a pot of salted water to a boil. Place the potatoes in boiling water and cover with a lid. Cook until medium soft. This may take a total of 10 minutes or a maximum of 15 minutes, depending on the size of the potatoes and how quickly the water boils. Potatoes should be soft enough to be easily pierced with a fork. As soon as the vegetables are ready, drain all the water and leave the potatoes in the pot without the lid.

Start heating a deep frying pan with a thick bottom. Set the stove to slightly below average power. Put about 50 g of butter in the pan. Pour the mixture of prepared spices and mix everything with a wooden spoon. Immediately put the boiled potatoes in the pan (it may still be hot). Mix everything carefully so that the fat and spices stick to all the potatoes.

Advice: you can also add your favorite grated cheese like cheddar, plain yellow or mozzarella before adding the dill and scallions.
