Zucchini hedgehogs – a recipe with a photo

Today we are preparing a very tasty zucchini dish with meat in gravy – it’s zucchini hedgehogs or meatballs, a real delicacy.

Ingredients:
chicken meat – 400 g;
zucchini – 1,2 kg;
rice – 80 g;
onion – 1 pc.;
garlic – 1 pcs.;
salt pepper.

Gravy:
onion – 1 pcs.;
small carrot – 1 pc.;
flour – 1,5 tsp;
tomato paste – 1 tbsp. l. ;
water – 300 ml;
sugar – 2 teaspoon;
salt.

The process of cooking zucchini hedgehogs.

Grate zucchini on a coarse grater. Place the salt on a sieve to drain the liquid. Then squeeze well.

Pour boiling water over the rice and put it on the fire. After boiling, cook for 7-10 minutes. Discard in a colander.

Salt and pepper the ground meat, add grated onion and garlic, and an egg.

Mix thoroughly. Add rice, then well-squeezed zucchini, mix.

Form small meatballs. We put it in a form greased with oil. It is very desirable to heat the form in the oven for 5-7 minutes, then the meatballs will not stick. We send it to a preheated oven for 20 minutes at a temperature of 200 degrees.

Fry onions and carrots in a pan. Add a little flour.

Separately, in a ladle, mix tomato paste, salt, sugar, and hot water. Add to our carrots. Let it boil for 2-3 minutes.

Take the meatballs out of the oven, pour the sauce over them and put them back in the oven for 5-7 minutes.

Serve this delicacy with any side dish, porridge or potatoes.
