Zucchini, potato and chicken liver stew – recipe.

Vegetables and chicken liver – what could be more useful? And how delicious it is! I decided to return to the benefits of chicken liver. Did you know, for example, that it contains almost as much protein as a chicken breast, so it is good to eat it during a diet? However, for some reason it is not recommended for children under three years old, so I did not give it to my son. I only gave it to try. But since he was not happy with her, I postponed the liver test for later.

And today I decided to cook a liver with vegetables. Such stew with liver.

Ingredients:
chicken liver – 400 g;
potatoes – 6-7 small tubers;
zucchini – 150-200 g;
onion – 1 pc.;
small carrot – 1 pc.;
tomato paste – 2 tbsp. L.;
garlic – 1-2 cloves;
salt, pepper and spices to taste;
herbs to taste;
a little vegetable oil for frying.

The process of cooking stew.

Finely chop the onion. Chopped the garlic smaller. I fried them together in a pan.

I grated carrots on a coarse grater.

I sent it to the other vegetables in the pan.

I washed the liver well, removed all the fat and bile.

I sent it to the pan, fried it for 6-7 minutes. I put it in a saucepan.

I added tomato paste and water to cover the liver. Added salt and pepper, spices. For some reason I wanted to add dried basil. I tried it on salt. Peeled the zucchini and cut it into long pieces. Like this.

I cleaned the potatoes. I had small young tubers. Cut into large pieces.

First, I put pieces of potato on the liver, and then zucchini.

Covered with a lid and left to stew on a low heat. When the vegetables on top became soft, I mixed everything. Chopped the greens, added them to the pan. I mixed everything again. The dish is ready.

It’s very tasty, try it. To reduce the calorie content, you can replace potatoes with cabbage or put only zucchini at all.
